Pantelli's Chicken Tarragon Sale (Pete's Chicken Salad)

1 1/2 lb cooked, chopped chicken
1/8 t. mint extract (or 1/2 t. dried mint or 3 t. fresh chopped mint)
1/4 t. cayenne pepper
Salt to taste
2 t. dried tarragon
1 t. garlic powder
1/2 cup of sour cream
1/2 cup of mayonnaise
2 stalks of celery, finely chopped
1/2 cup of chopped walnuts
1 1/2 cup of seedless grapes or chopped pineapple or apples

Combine chicken with all of the seasonings. Add sour cream and mayonnaise and mix thoroughly. Add celery, walnuts, and grapes; toss gently. Adjust seasoning. Chill. Serves 6 to 8.
